Herb & Veggie Toasts

Serves 1

2 slices gluten-free bread, toasted

¼ cup hummus

1 sprig fresh dill

1 small cucumber, thinly sliced

1 small tomato, thinly sliced

1 avocado, sliced

sea salt & black pepper, to taste

Omnivore option: 4 ounces smoked salmon

Layer hummus, optional smoked salmon, dill, veggies, and avocado on top toast slices. Top with a sprinkling of sea salt and black pepper.
