This is also one of those recipes where the bruschetta topping steals the show. It’s so versatile you’ll want to keep a batch in the fridge to scoop onto crackers, taco chips, fish, or even roasted vegetables. Get creative, it works with just about everything.

Why This Meal Works

Bruschetta Chicken is a great example of how food can be simple, balanced, and satisfying without feeling heavy. Chicken breast provides high-quality protein. Fresh tomatoes and basil add brightness and antioxidants. Healthy fats from olive oil support flavour and satiety. Balsamic vinegar adds depth and a touch of natural sweetness

It’s fresh, light, and filling — perfect for anytime you want something that feels nourishing but still exciting!!

Bruschetta Chicken

Ingredients

  • 1 lb chicken breast

  • Sea salt & black pepper, to taste

  • 3 medium tomatoes, diced

  • ½ cup red onion, finely diced

  • 2 garlic cloves, minced

  • ¼ cup fresh basil leaves, chopped

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon balsamic vinegar

Instructions

Preheat the grill to medium heat. Add the chicken breasts, season generously with sea salt and black pepper, and cook for 10–15 minutes per side, or until fully cooked through and juices run clear.

While the chicken is cooking, prepare the bruschetta topping. In a small bowl, combine the diced tomatoes, red onion, garlic, basil, olive oil, and balsamic vinegar. Season with sea salt and black pepper to taste and gently stir to combine.

To serve, spoon the fresh bruschetta mixture generously over the cooked chicken breasts and enjoy.

Serving & Make-It-Your-Own Tips

• Serve alongside grilled or roasted vegetables, quinoa, or rice

• Pair with your favourite leafy green salad for a lighter meal

• Sprinkle with feta, goat cheese, or shredded mozzarella before serving

• Prefer the oven? Bake the chicken at 350°F (177°C) for 30 minutesinstead of grilling

This is the kind of meal that works for busy weeknights but also feels impressive enough for company. Fresh ingredients, bold flavour, and minimal effort, exactly how nourishing food should feel.
