Bruschetta Chicken
Ingredients
1 lb chicken breast
Sea salt & black pepper, to taste
3 medium tomatoes, diced
½ cup red onion, finely diced
2 garlic cloves, minced
¼ cup fresh basil leaves, chopped
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
Instructions
Preheat the grill to medium heat. Add the chicken breasts, season generously with sea salt and black pepper, and cook for 10–15 minutes per side, or until fully cooked through and juices run clear.
While the chicken is cooking, prepare the bruschetta topping. In a small bowl, combine the diced tomatoes, red onion, garlic, basil, olive oil, and balsamic vinegar. Season with sea salt and black pepper to taste and gently stir to combine.
To serve, spoon the fresh bruschetta mixture generously over the cooked chicken breasts and enjoy.
