Mango Glow Stir-Fry

Mango Glow Stir-Fry

Makes: 4 servings


Ingredients

  • 3 tablespoons coconut oil

  • ½ cup chopped yellow bell pepper

  • ½ cup chopped red bell pepper

  • 2 eggs, beaten

  • 3 cups cooked brown rice

  • 1 cup BPA-free canned kidney beans, drained and rinsed

  • 1 cup sugar snap peas

  • 4 cloves garlic, minced

  • ½ cup coconut aminos

  • ½ cup chopped mango

  • 2 scallions, chopped


Omnivore option:

• Sautéed chicken breast, sliced and added at the end


Instructions

  1. Add coconut oil to a large pot or deep skillet over medium heat. Once hot, add the yellow and red bell peppers and sauté until softened.

  2. Pour in the beaten eggs and gently scramble directly in the pot. Once the eggs are cooked through, add the cooked brown rice, kidney beans, sugar snap peas, and garlic. Stir and sauté until everything is warmed through.

  3. Add the coconut aminos and allow the rice to cook for a few minutes, letting it lightly brown and absorb the flavour.

  4. Once the rice is slightly golden, gently fold in the chopped mango and scallions. Remove from heat and serve warm.

  5. Add chicken, sauté it separately and stir it in just before serving.

• Swap kidney beans for chickpeas if preferred
