The Recipe
Creamy Cottage Cheese Alfredo Sauce
Prep Time: 5 minutes | Serves: 2 generous portions
Ingredients:
• ¾ cup cottage cheese (ideally 2% for hormone support — full-fat is more satiating and gentle on blood sugar)
• ¼ cup unsweetened almond milk (or filtered water if you prefer)
• 1 tablespoon nutritional yeast (adds cheesy flavor and B-vitamins without dairy)
• 1 clove garlic, minced or ¼ tsp garlic powder
• ½ teaspoon onion powder
• ¼ teaspoon sea salt (adjust to taste)
• Fresh ground pepper, to taste
• Optional: 1–2 teaspoons lemon juice (for brightness)
• Optional: Pinch of nutmeg (classic in Alfredo sauces)
Instructions:
Add all ingredients to a blender or food processor and blend on high until smooth and creamy. Scrape down sides if needed.
Pour into a small saucepan and heat gently over low-medium heat, stirring frequently until warmed through (do not boil).
Serve immediately over your choice of noodles, spaghetti squash, or vegetables.
